El Dorado 15 Year Rum

 This El Dorado is a Demerara rum worth the fifteen year wait. It comes from Guyana -- the only home of Demerara sugar -- and is produced by Diamond Distillery, the last-remaining Demerara rum distillery in the country.

Demerara rums are iconic. They're an essential for tiki enthusiasts, and anyone who wants their home bar cart to convey that subtle message, 'I know what's up.' Production Notes El Dorado rum is produced using the distillery's original distilling equipment and heritage stills that are the last of their kind in operation-- some nearly 300 years old.  This rum has been laid down in oak barrels for at least 15 years. Aging in ambient temperatures in a tropical environment contributes to the smoothness, complexity, and rich aromas that make these rums so special. Finally, the rum is artfully blended with other, longer aged rums to produce a particular flavor, complexity, and strength. Conforming to global regulations on age statements, the age on the bottle refers to the youngest rum in the blend, though the oldest may be many years older.  
Terroir When the Dutch settlers arrived to Guyana in the 1600s, the county of Demerara was actually submerged in the Atlantic. But with the land reclamation methods they'd employed in the Netherlands, the settlers were able to successfully recover the land, resulting in a soil ideal for growing sugarcane: high in minerality and nutrients. By the 1800s, during the period of the British colonization of Guyana, there were more than 300 sugar estates with distilleries operating in the Demerara valley. Now, Diamond Distillery is the last one remaining.
