Tasting Notes The nose is simultaneously nutty and fruity with a good deal of spice. The palate is full-flavored and complex, silky smooth, extremely balanced with spice, fruit, sherry, and toasted notes. Warm, coppery malt, caramel and hints of chocolate on the long, slow finish.

Production Notes

As with all Irish whiskey, Redbreast is made using a mash bill of both malted and unmalted barley. It is  triple-distilled in handmade, copper pot stills, then aged in a combination of first-quality seasoned ex-bourbon and sherry casks. Finally barrels that are aged a minimum of 12-years (but many that are much older) are blended together to create something that has a distinct and unique character in the world of whiskey. 

Origin Story

In 1903, John Jameson & Sons and Gilbeys Wine & Spirits Import Company agreed that Jameson would send spirit from their Bow Street Distillery to Gilbeys to mature. Gilbey’s was an importer who had a good supply of sherry casks to house the whiskey in. What began as a nickname, 'Redbreast,' given by the Chairman of Gilbeys who was a dedicated birdwatcher, had become the whiskey's official name by 1912.

Terroir

The barley used in this whiskey's mash bill is sourced from the Munster region surrounding the Midleton Distillery. The water is sourced from the Dungourney River, which begins in the green hills of nearby Clonmult and flows through a deep glen, making its way to sea at the village of Ballinacurra, one mile outside the town of Midleton.
