Tasting Notes Cinnamon, rosemary, eucalyptus, lavender, and a hint of juniper on the nose. On the palate, black pepper and cardamom, deep floral notes grow dry and herbal with a long, pleasant, nearly minty finish.

Production Notes

It starts with the distillery's well-regarded Cathouse Gin, which is in the MidAtlantic style  -known for its softer, richer, broader flavor as compared to the standard London Dry.

This gin is made in a small pot still, by hand, one batch at a time. It uses a traditional ratio of juniper to coriander, along with eleven other secondary botanicals, including elderberry and rose hip. The botanicals are all macerated and distilled, ensuring a full and rich flavor extraction.

The Cathouse Pink Pepper Gin adds a kiss of hibiscus and a deep warm pink pepper spiciness for further depth, brightness, and of course that alluring color. 

Founder Facts
In a previous life, Gil Spaier was an architect with an expertise in restoring Manhattan townhomes. Now he's opened a distillery in the historic Ironbound neighborhood of Newark, NJ, crafting a range of distinctive spirits that draw upon historical production methods in spirits while also offering something new.
