Suze Aperitif Liqueur: A Beloved Ingredient for White Negroni and Beyond

Suze Aperitif Liqueur, pronounced "sooz," has gained popularity as the go-to gentian liqueur for crafting the perfect White Negroni. Its unique flavor profile and versatility make it an essential addition to any cocktail enthusiast's collection. Whether you're mixing it into your favorite drinks or enjoying it on the rocks, Suze Aperitif brings a smile to everyone's face.

Savor Suze Aperitif as a Standalone Sipper or in Cocktails

How do you make a suze drink? Grab a short glass filled with ice cubes and pour 1 oz part Suze and 2 oz tonic, then add a lemon wedge.

Though best known for its role in White Negroni cocktails, Suze Aperitif Liqueur (40 proof) is also an excellent low-alcohol option for casual sipping. Serve it on the rocks with a twist of lemon for a refreshing and delightful experience.

Suze Aperitif Tasting Notes

Suze Aperitif Liqueur presents a bold and complex aroma, while its taste is gentle and delicate. Balanced vegetal notes mingle with subtle citrus and floral tones, creating a versatile and enjoyable liqueur.

Suze Aperitif Production: A Rich History of French Aperitifs

Suze Aperitif Liqueur, a gentian-based aperitif, dates back to 1885 in France. Today, Suze is crafted from both wild and farmed gentian and produced in Thuir, France. The production facility, designed by Gustave Eiffel - the man behind the Eiffel Tower - adds an interesting historical touch. The gentian macerates in alcohol for one year before pressing, distilling, and undergoing a final blending stage.

    One of My Favorites

Suze is a wonderful liqueur that has a permanent place in my bar. It has an initial very pleasant sweet taste, skips a beat, and then transforms to a lasting quite pleasant bitterness that trails off on the back of the tongue. Of everything I've tried, it is the ingredient that adds the most depth to cocktails I make — if you like a cocktail that steps through several different flavors with each sip, then you've got to give this a try.

Besides the classic white negroni, I recommend trying the Golden Lotus, a very well-balanced cocktail.

    • 1 part Suze

    • 1 part gin

    • 1 part Cointreau

    • 1 part lemon juice

    • 3 drops 20% saline

    • Express and retain or discard grapefruit peel

Or try my personal riff on the Naked and Famous, a cocktail I call the Naked Suzy:

    • 45ml (1.5oz) mezcal

    • 30ml (1oz) Suze

    • 30ml (1oz) Yellow Chartreuse

    • 30ml (1oz) lime juice

    • 6 drops 20% saline

    • lime twist garnish

    A Crazy Amaro

Someone described this to me as a "Mountain Dew Liqour, but in a good way". Although that may sound terrible, Suze is actually really good. Very hard to mix with though, it can easily overpower a beverage.

Just the perfect touch of bitter

Great bottle, a bit lesser-known, but still a mainstay of my bar. I like it in a White Negroni!
